Ok, we all know airports aren't famous for healthy food options. If you're like me, and want to keep eating clean while you travel, you must try the below recipe. Quick tip: make a point to get in gear the night before your flight IE (make sure you have your ingredients on point.) The recipe start to finish takes 25 mins, you'll thank me, when chowing down on these beauties instead of the inflight Pringles

Note I use Quest protein powders for all my cooking.

Serves: 12 15
Ingredients
• 1 cup old fashioned oats
• 2 heaping scoops of organic peanut butter protein powder
• heaping ½ cup creamy peanut butter ( Add a little more if you are a huge peanut butter fan like me.
• ¼ cup unsweetened apple sauce + 1-2 Tablespoons more, if needed
• ½ cup organic freeze-dried strawberries
• 2 Tablespoons honey
• 2 Tablespoons mini chocolate or carob chips (optional & delicious)
Instructions
1 Preheat oven to 360°.
2 Place oats, protein powder, freeze-dried strawberries and chocolate chips into a small bowl and stir to combine.
3 In a separate bowl mix together the peanut butter, applesauce and honey. Pour the wet peanut butter mixture over the dry mixture and stir well. Combining this mixture will take a little stirring power and it may seem a little crumbly at first. I used my hands to knead the dough near the end its helps. If it's not sticking together, you can add an extra tablespoon or two in order to moisten it.
4 Once combined, start forming the dough into balls. Dough should make anywhere from 12-16 balls.
5 Place balls on a parchment lined baking sheet, press the ball down into a cookie shape with a fork and bake for 10-12 minutes.
6 Remove from oven, let cool and enjoy. Store any leftovers in a covered air-tight container on the counter/in the fridge for immediate consumption or store in the freezer for later.
